This is probably one of the easiest recipes in the world and apparently His Majesty, the Agong, eats it. It's a very simple chicken curry, very much like masak lemak but it's a healthier alternative. There is no santan, instead there is evaporated milk (which I think is slightly healthier though not as healthy). Nevertheless, try it out!! It's a fun, simple recipe that promises a delicious light curry.
Easiest Chicken Curry In The World
1 Whole chicken (I used 2 thighs, 2 wings, 1 keel)
2 potatoes, cut into 3 cm cubes (or just cut la however)
125ml evaporated milk
1250ml water
10 curry leaves
2 lemon grass stalks (serai)
3 tbsp meat curry powder (moistened with some water)
AN Oil
Method
1) Heat up the oil in a wok, fry the curry leaves and moistened meat curry powder till it is fragrant, becareful though not to burn it x_X the curry leaves will turn brown :D
2) Add in the evaporated milk and water, bring to a simmer
3) Add the potatoes and chicken and lemon grass
4) Let it simmer/boil till it reduces a little bit, or else it's gonna be like water curry.
5) Once it has reduced to about 3/4 the original amount, it should be not as liquid anymore.
6) Once you've ascertained the chicken and potatoes are cook, season with salt, pepper, some chicken stock powder and some MSG if you want.
7) Taste! Continue simmering until desired consistency.
8) Dish out and serve.
TADAAAAAA. Gone were the days when curries meant a whole load of spices and a big headache to boot. Today, curry is so much easier plus its really really good!
